El Balcon De Las Americas is one of South Florida’s favorite restaurants. More than just a Colombian restaurant, the owners envisioned high quality service and delicious traditional Latin American dishes. The story of El Balcon begins back in Colombia, where the founder Alvaro Tobar, dreamed big ideas of starting a restaurant in America. Tobar decided to leave friends and family and move to Florida in order to turn dreams into reality. Twenty years later El Balcon De Las Americas is home to thousands of customers per year, with six restaurants and growing, the story of El Balcon is impressive and inspiring.

Challenges Faced 

Managing a multi-unit full-service restaurant has its difficulties. Each of the restaurants operated similar menus, but had its own individual character and management. With the popularity of the restaurant, phone ordering and online ordering became very busy with over fifty orders per day per store and it became difficult to manage from store operator level. Each of the restaurants also had its own POS reporting data and online menus so updating menu item prices in store and online took twelve steps. “Great food and service is critical to the success of each of the restaurants” says Roberto Veleze Co-Founder and General Manager, “it’s a family business.” El Balcon was actively searching for a solution to address their needs.   

El Balcon approached Cervion Systems once it became apparent that a technology solution was needed to address these challenges. “They were already a successful operation but needed more of a multi-store solution in order to address the complexities of each of the stores” said Louis Aurrichio, Director of Operations of Cervion Systems. Service was a big concern of Roberto’s since they had a very good relationship with the current provider. Cervion’s South Florida office is centrally located near all the El Balcon restaurants and it was a great partnership.

 

Solutions for Success 

The Cervion sales and project management team put together a multi-site solution for El Balcon De Las American. The sales team visited each of the locations and conducted site surveys even before they had an agreement in place. A multi-restaurant solution was presented and accepted by the El Balcon management team - this included a cloud-based back office system with fixed POS terminals at each of the stores. This would give the group the ability to update all in store data and online menus with one login saving eleven steps. The solution saved the owners at least 2-3 hours per week per store for the family chain.

Also, included was a tableside ordering system with a very simple to use wireless ordering iPad for the servers to use on the dining room floor. “Training employees now is basically no time – its extremely simple to use” said Roberto. Cervion also provided a branded online ordering system integrated into the POS menu, back office and kitchen printers. This removed all the complexity of ordering online and helped modernize all the restaurants from the back office to the front of the house and kitchen.

El Balcon makes thousands of dollars additionally per week with the benefit of also not having to pay third party online ordering commissions. There were some concerns about the equipment or software being out of date down a few years down the road.

“We put them on our As-A-Service plan which includes all the software updates, equipment replacement and 24 x 7 support” says Louis Aurrichio.
